Inspector’s narrative

Note: Proof box cooler combo unit repaired, sleeve-type insulation installed as well as silicone sealant to contain condensation. Prep cooler on the line underwent maintainence ATOI, all food items within were in temp. FSE stated this AM digital thermometer was reading 50 degrees F on the prep cooler, but all food items spend night in the walk in cooler. FSE stated no food was within prep cooler when reading 50 degrees F for greater than 2 hours, and that temps were monitored. (Prep cooler was the prep cooler closest to entrance to rear prep area farthest from registers, on wall opposite serving area.) Temperature on digital exterior thermometer of maintainenced prep cooler dropped to 48 degrees F ATOI and all food within within temp.
