Inspector’s narrative

Quaternary Residual at automatic dish washer at 100 ppm. Lactic acid SMARTPOWER at 3 bay sink above 1000 DDBSA. Operator has proper chemical test strips. Operation uses a web based food safety program GO. This system requires mandatory temperature control and sanitation tasks be performed at set intervals. Operator is anticipating biannual inspection service by their 3rd party inspection service ( STERITECH) soon..All foods are received fully cooked and frozen. Defrosting under refrigerated conditions was observed. Staff were hair restrained and gloved where appropriate. Accurate metal stem probe thermometers were present. Sample acceptable temperatures: Walk in cooler with sliced deli meats, various soup containers sliced vegetable and products for service line replenishment at 32-40 degF.. Service line refrigertaion with sliced and processed vegetables at 37-42 degF, sliced deli including turkey and ham at 38-40 degF, chicken and tuna salad at 39-40 degF. Service line hot holdings with soups, and sauces at 170 degF and aboce. Rice at 186 degF. Contents of freezer found solid includes soups and proteins, bread products.
