Inspector’s narrative

All deficiencies not corrected at the time of inspection must be corrected. The final rinse on the mechanical dishwasher was about 100 ppm residual chlorine. All managers at this facility are Serv Safe certified. All food items stored in the cooling units are labeled as to contents, date storage began and date when it needs to be used. Except where indicated, cold holding temperatures were measured to be between 39 to 44 degrees F and hot holding temperatures were measured to be above 140 degrees F. Had a brief conversation with the General Manager about the advantage of cold and hot holding potentially hazardous food items in stainless steel instead of plastic containers. Report e-mailed.
