Pre-operation inspection of Panera Bread after change of ownership facility now operated by Doherty breads of Scarsdale LLC. A complete original application has been received to this department. Catering operation to be removed from facility. All measured cold and hot holding temperatures adequate at this time. observed staff food handling procedures adequate at this time. Soups are the only item reheated and are received commercially cooked and pre-packaged. soups are reheated to 170F in a rethermalizer. Extermination provided by Enviro-safe pest control last serviced 10/14/23. New food allergy posters on site. Serve safe certifications present. Discussed: proper heating temperatures, recycling law, Styrofoam ban, regular extermination, and ticketable offenses including bare-hand contact, infestation, failure to renew permit. new single service law. Violations to be corrected by next routine inspection. PERMISSION TO OPERATE HAS BEEN GRANTED. FACILITY MUST FOLLOW ALL FEDERAL STATE AND LOCAL RULES AND REGULATIONS. LET THIS INSPECTION REPORT SERVE AS A TEMPORARY PERMIT TO OPERATE UNTIL A PHYSICAL PERMIT IS RECEIVED BY MAIL. NO PERMIT RESTRICTIONS.
