Inspector’s narrative
All hot-hold and cold-hold temperatures satisfactory. Proper cooling technique and procedures were discussed at the time of inspection. Handwash stations were adequate with paper towels, soap, and hot and cold running water. Facility is very neat, clean, and well-organized. All food storage was well-organized and well-maintained with expiration labels on each food container. Thermometers were present in all coolers, even if there was an external thermometer on the unit. The food temp probe was calibrated adequately in an ice bath. Soups are temp'd each time a new batch comes to the food line. Panera requires soups are held at 165F rather than 140F. Bathrooms are clean and well-mainted as well as front of house.
