Inspector’s narrative

Food temperatures acceptable at this time are as follows; Cold Held: roasted corn 38'F, rice blend 36'F, hummus 38'F, tuna salad 36'F, cooked roast beef pieces 38'F, and plain cream cheese individual portions 36'F. Hot Held: chicken noodle soup 184'F, corn chowder 192'F, chicken and wild rice soup 190'F. Main walk-in cooler found at 37'F. Bakery walk-in cooler found at 43-44'F. Observed gloves and utensils being used by employees. Hair restraints in use by employees. All coolers keeping foods at 45'F or below. Residual chlorine sanitizer in dish machine is found at 50 ppm (parts per million) minimum which is satisfactory. Food thermometers on site.
