Inspector’s narrative

Establishment has probe/metal-stem type thermometer onsite as required. Acceptable temperatures for reference: milk 44.5F in reach-in cooler; bagged soups 178.8F in soup warmer; cut tomatoes 35.9F, hummus 32.6F, sliced deli meat 43.4F, cut avacado 35.0F stored in preparation top cooler; cheddar broccoli soup 158.8F, vegetable soup 172.4F, chicken noodle soup 152.9F in steam station; cooked and cooled grains 41.2F, precooked chicken 40.3F, mixed chicken salad 35.7F, mixed tuna salad 35.2F in preparation top coolers; mixed chicken salad 43.2F, sliced chicken 41.0F in drawer cooler; cooked rice and quinoa 41.7F, mixed chicken salad 41.6F, gallons of milk 43.9F, smoked chicken 38.5F, and roasted chicken 39.4F stored in walk-in cooler. Dish machine euipped with chemical sanitizer properly rinses at 120.0F after 3-4 cycles. Tables and chairs in dining area are congested, but alternating tables are affixed with stickers that identify certain tables as unavailable. The establishment is responsible to ensure that patrons are adequately spaced in accordance with NYS guidance. It is recommended to adress congested seating areas wherever possible to aid in compliance efforts.
