Conditions for operation are satisfactory at this time. Food thermometers on site. Current foodservice permit is posted. Food temperatures acceptable for reference today are as follows; hot held: cheddar broccoli soup 175'F, chicken Marsala soup 169'F, and chicken noodle soup 178'F. cold held: rice blend 41'F, black bean and corn salsa 42'F, cooked chicken (pieces) 40'F, hard boiled eggs 39'F, tunafish 40'F, seasoned steak 41'F. Napa chicken salad 41'F. Service line low cooler holding dairy found at 39'F. Walk-in cooler found at 39'F. Bakery walk-in cooler found at 33'F. Chlorine residual in dishwasher rinse cycle is found at 50 parts per million at wash and rinse temperature of 130'F which is satisfactory. Sink sanitizer is found at 704-1875 parts per million Lactic Acid and 272-700 parts per million DDBSA both of which are satisfactory.
