Inspector’s narrative

This vendor use a food safety and sanitation monitoring service GO COMPLIANCE requires the operator to perform temperature sweeps and sanitation activity on a set schedule. The facility also uses a 3rd party inspection service ECOSURE and the results of a May 2024 inspection are similar to this findings of this inspection. Automatic dish washer at 50-100 ppm chlorine residual. At 3 bay sink SMARTPOWER sanitizer levels found at 700 ppm DDBSA. All staff were hair restrained and gloved where appropriate. An employee was observed performing appropriate hand washing after changing a trash can liner. A porter was performing mid shift floor sweeping. All proteins and most bread products are received fully cooked and frozen. A FIFO system is employed to thawing products in the walk in refrigerator and product identification and date labels are attached at start of thawing operations. Sample acceptable temperatures: Sandwich preparation console cooler with ham, beef, chicken soft cheese, humas, chopped vegetables and cream based sauces at 34-38 degF. Walk in cooler with defrosting sauces and fully cooked beef chicken and ham at 37 degF. Contents of freezer storage found solid include beef, chicken, ham and all products were stored in the shipping boxes with UPC labels attached. Soups and broths in service line hot holding at 158-178 degF.
