Inspector’s narrative

SMARTPOWER residual at 3 bay sink at 300-400 ppm DDBSA. Chlorine residual at automatic dishwasher at 100 ppm . Thermometer; Operator has a WIFI based food safety / sanitation task checklist. Thermometers are WIFI connected to a corporate data base. Temperature checks and sanitation tasks are performed throughout the day and tracked by corporate safety staff. All refrigeration held accurate thermometers. All staff were gloved and hair restrained. Surfaces and equipment were found clean. Food containers in refrigeration are dated and labeled. All food containers are small batch portions for service line replenishment. Sample acceptable temperatures: Walk in refrigeration at 35 degF with tomorrows product thawing under refrigerated conditions. Precooked chicken and several deli storage at 30-35 degF, soup and cream based preparation at 28-34 degF. Contents of walk in freezer found solid include chicken, soups, whole muscle roast proteins (cooked), cheeses and dressings. Several service line flip tops with chicken and tuna salads, soft cheeses, vegetables, cheese crumbles at 33-37 degF.
