Inspector’s narrative

1. Facility is using time as a public health control for almond milk, regular milk, and half n' half that is stored out at room temperature at the self service coffee stations. The bottom of the containers are labeled with discard times 2 hours after the product has been removed from refrigeration. According to the March 16, 2023 New York Statewide Chain Restaurant Waivers, Determination and ROP Plan Approvals list Panera is not listed as being approved to use Time as a Public Health Control. One milk was temped using a stem probe thermometer at 44F at 2:45PM. The discard time on the label read 4:02PM. 2. The wall mounted sink and surface sanitizer dispenser is labeled Oasis 146 which is not the sanitizer product that is coming through the dispenser. Please properly label the wall mounted dispenser. The container of sink and surface sanitizer located under 3-compartment sink is properly labeled. 3. Must correct all violations in a timely manner or enforcement action may be issued.
