Soups currently come in frozen and are put into rethermalizer after thawing in walk-in cooler. Are then heated to =>165dF before being hot held at >140dF. Dough for bakery items comes in premade and is cooked at facility. Eggs are hardboiled or in souffle and heated over 165dF and are the only meat product that is delivered in a raw state per staff. Reviewed food allergy poster. CPR Kit location poster and choke poster provided. Reviewed cold hold temperature to possibly change to <=41dF in future. Corrections to be verified at next inspection.
