Inspector’s narrative

No violations observed during inspection. Observed staff wearing gloves to prevent bare hand contact with ready to eat food items such as bagels. Advised staff to use a barrier (gloves, wax papers) when handling baked goods such as cookies, muffins. Discussed the importance of washing hands in between gloves changes, after using restroom, eating, coughing, smoking, sneezing and after any possible contamination. Advised staff to use available digital probe thermometer to verify proper internal cooking/ reheating of eggs done at 145F or above. Observed hot holding of potentially hazardous food item such as broccoli cheddar soup at 165F (Required is 140F or above). Observed all refrigeration unit equipped with monitoring thermometer to verify unit is cold holding required potentially hazardous food item such as sliced tomatoes at 45F or below (Actual 39F). Observed test strips to verify the strength of quaternary ammonia sanitizing solution is at least 200 ppm to sanitize food contact surfaces and dishes/utensils. Discussed the significance of wash, rinse and sanitize food contact surfaces/utensils (cutting board, knives) in between food items to prevent cross contamination. Advised manager to work in small, manageable quantities while preparing potentially hazardous food items and return them back to hot or cold holding while not being actively worked on.
