Inspector’s narrative

No violations observed during inspection. Observed gloves to prevent bare hand contact with ready to eat food items such as bread. Discussed the importance of washing hands in between gloves changes, after using restroom, eating, coughing, smoking, sneezing and after any possible contamination. Advised staff to use available digital probe thermometer to verify proper internal cooking/ reheating of commercially pre-cooked chicken is done at 140F or above. Observed required hot holding of potentially hazardous food item such as chicken noodle soup maintained at temperature of 140F or above (Actual at 158F). Observed required cold holding of potentially hazardous food item such as ham and turkey is maintained at temperature of 45F or below (Actual at 38F). Observed all refrigeration units containing potentially hazardous food items were equipped with monitoring thermometer to verify units are able to cold hold hold food items at temperature of 45F or less. Observed test strips to verify the strength of quaternary ammonia sanitizing solution is at least 200 ppm to sanitize food contact surfaces and dishes/utensils. Discussed the significance of wash, rinse and sanitize food contact surfaces/utensils (cutting board, knives) in between food items to prevent cross contamination. Advised manager to work in small, manageable quantities while preparing potentially hazardous food items and return them back to hot or cold holding while not being actively worked on.
