Inspector’s narrative
No violations observed. Advised staff to use digital thermometer to ensure pre-packaged soups are heated, and hot held at 140F or greater, shredded chicken salad is cold held at 45F or less. All staff member were wearing gloves while handling ready to eat food items such as sandwich rolls. Advised staff to wash hands for at least 20 seconds using warm water, soap, and paper towels. Hands are to be washed in between glove changes, when entering the kitchen from break, or whenever hands are contaminated. Dishwasher was sanitizing dishes at 50 ppm (chlorine) per facility's test strips. Advised management to develop ill worker policy. Recommended ill workers are to be excluded from work for 24 hours following last food borne illness symptom. Symptoms include: vomiting, diarrhea, nausea, sore throat, fever, yellowing of the skin and eyes, and open sores.
