Inspector’s narrative
Notes: Thank you for your time. No violations were apparent at the time of the inspection today. I observed a crock of heated chili holding at 168F degrees on the service line. On the cold service prep counter, I observed about 4 hard boiled eggs holding at 38F in the top bins. In the opposite prep counter, I observed sliced cooked turkey deli holding at 37F in the refrigerator drawer. I observed about 1 pound of uncured sopressetta holding in sealed bags at 36F inside the walk-in cooler. Each refrigeration unit contained a visible accurate thermometer to monitor items held in the bakery, prep stations, and storage area. All of the restrooms and sinks were operating as designed, and the air gap was in good condition. All floor and wall surfaces were smooth and easily cleanable. All pest control is managed with a routine professional service, and no access points were apparent at this time. I discussed the NYS allergen guidance and dedicated areas to avoid cross contact along the prep counters, if the facility offers options such as nut-free, gluten free, or egg-free.
