Inspector’s narrative

Thank you for your time. Several small sections under the bakery counters have minor build up of crumbs and dust accumulating at the time of the inspection. The staff reviewed this item, and states that more routine cleaning will be completed when food orders are fulfilled after lunch rush. Notes: No additional violations were apparent during the inspection. Inside of the walk-in cooler, about 2lbs of prepared chicken salad were observed holding at 37F degrees. Small strips of grilled chicken were thawing on a pan and observed at 33F degrees. On the service line, about 16oz of chilled tuna salad was holding in the cold table at 38F degrees and hard boiled eggs were holding at 39F. At the bakery section, pastries and icing were observed at 39F degrees in the cooler. A full crock of hot chili was observed on the service line, holding at 162F degrees. About 40oz of creamy potato soup was observed hot holding at 159F degrees. No evidence of pests was observed, and commercial services and cleaning supplies are currently arranged with Eco Lab. All of the garbage bins outside were closed and secure during the inspection. All equipment was operating as designed and no items were found in disrepair.
