Inspector’s narrative

Notes: Thank you for your time. No violations were apparent during the inspection today. The manager reviewed the cooling and reheating process with re thermalization, mostly used with soup products. each cooler contained a visible thermometer to monitor temperatures. the staff explained how orders are handled when an food allergy must be controlled, and an extra cleaning for prep stations. One crock of broccoli cheese soup was observed holding at 170F degrees and one crock of Mexican corn soup was temped at 169F degrees on the service line. A pack of mozzarella cheese was observed at 38F degrees and sealed hard boiled eggs were holding at 40F degrees, both inside the walk in cooler. At the service line, cooked chilled chicken strips were observed at 39F degrees. All immediate service food items had clear labels for discard times, and all coolers used a visible thermometer to measure temperatures. All of the handsinks, restrooms, and other plumbing was observed operating as designed. The garage containers were secured, and all cleaning items were marked and stored in a separate section of the kitchen. The dishwashing area is maintained and racks are correctly used for air drying.
